Mega Cookie without flours with Oleander white almond paste By Chloé Sucré

A few days ago she delighted everybody with a recipe that we want to share with you. A way to prepare desserts & snacks without using flours and only with organic food.
This mega cookie is something between a cookie and a brownie, sponge texture inside and a crunchy layer on top.
We advise you to use a round mould like the pan that Chloe is using, which can be used in the oven and be served directly.

Mega cookie without flour with white almond Cream Oleander bio:
For a 24 cm. of diameter mould :
● 2 organic eggs
● 1 teaspoon vanilla powder
● ½ cup / 75 gr. Coconut sugar
● 1 teaspoon of baking soda
● 1 pinch of salt
● 1 cup / 250 ml. white almonds Cream Oleander Bio
● 75 gr. dark chocolate 70% cacao

Set the oven to 180ºC and spread with butter or coconut oil on a pan that can go to the oven or a mould.
In a bowl, beat the eggs with the vanilla and the sugar of coconut. Add the baking soda and the salt and continue mixing .
Add the white almonds paste Oleander Bio and the chocolate in pieces and mix.
Pour the mass in the pan. Cook during 22-25 minutes.
You can serve it with some ice cream or hazelnut paste Oleander Bio or more white almond paste Oleander Bio and a topping of our dry fruits.
Perfect to share with friends and family. Probably you will eat everything, but if not, keep it in a closed recipient in the fridge.
